He touched the tines and knife edge!!!

I am a service trainer and am always looking to surpass expectations... however, this set of videos is not a good start for anyone. I expected 'The Art Institutes' to have high quality videos, as I am a graduate of The Art Institute of Ft. Lauderdale, but was shocked by the quality and look of the clips.With that said, I decided to watch the video on table setting, usually a good place to start as the table is the location at which the client will eat. The "instructor" does not follow the 1/3s rule! He touches the tines of the forks and blades of the knives! I scrubbed the video back to see if I was mistaken, but to my horror, I was not. This is improper setting of a table and should be taken down... I am appalled at this 'Trainer' teaching servers poorly.

Incorrect

Just checked the Plate Service video as an "appetizer" before digging into all of the clips. When the first thing he did was serve a food course from the wrong side, then handle the plate again once it's down, I thought, "Oh-oh........" Can't really recommend for someone looking to learn proper table service, but there are a few points regarding small restaurant details that are interesting.

Absolutely terrible

Probably the worst coffee service instruction I've seen. Really terrible techniques and practices, even the most basic things like purging and wiping the steam wand, purging the group head before making espresso, and grinding fresh aren't being done. And what's up with him waving the pitcher up and down as he steams? Oye. NOT recommended.

Misinformation!

I watched the espresso episode and it's simply incorrect. The terminology and procedure is entirely wrong. Please seek knowledge elsewhere.
