This right here saved me from my insanity!
My husband a Pizzaiolo & Italian chef has been dreaming of opening up his own place even before I met him over 15 years ago. His father in Japan was an Italian chef & Daisuke is too. However, as a teacher, I like stability. I like my summers off, I’m afraid basically. But after three years in a food cart, numerous articles & selling out more than not, I feel ready to go on this journey here. Yes, I attend workshops at the International Pizza Convention in Las Vegas & yes I’m hooked up with our local Score, but this podcast here! This is what has allowed me to feel confident, smarter, know what to read, research, plan, etc. I can’t listen without taking notes or searching up something new!
